Baby Shower Week continues!
Did you see these mini pies in the wrap-up post from last week? Wondering how to make them? Well, today I’m giving you the easy instructions on how to make them. I knew I wanted to make pies because my best friend has always preferred pie over cake :)
As I explained with the Almond Strawberry Cupcakes, I tried to keep things simple for the food. So I used refrigerated pie dough. The shower was right after Thanksgiving, so I lucked out and the pie crusts were on sale. I also decided to use pie filling instead of making my own. I chose apple and blueberry (which also happened to be on sale!)
These are so simple that I didn’t even make recipe card for them :)
Here are the instructions:- Roll dough out onto flour sprinkled cutting board.
- Cut circles out of the dough (I used a white wine glass) and press into mini muffin tin.
- Spoon pie filling into muffin tins (only fill about 2/3 of the way).
- Cut out smaller circles of dough, then press onto filling and dough.
- If you prefer, use knife to cut small stripes of dough, then arrange in criss-cross pattern as top layer.
In case you’re wondering, we used the book Jamberry for the blueberry pies and The Giving Tree for the apple pies.
