
We’re continuing on with Baby Shower Week here at The Pink Flour. Today, I have for you the {easy} recipe for the cupcakes I made for my best friend’s baby shower.
Once we decided on the children’s book theme, I knew I wanted to use the book Pinkalicious and make pink cupcakes (just like in the book!) Knowing there was other food I was making for the shower, I wanted to keep it simple. Therefore, I opted to doctor up a white cake mix instead of making from scratch.
For the frosting, I added strawberry jam to a basic buttercream recipe. You could make strawberry puree and strain the seeds from it, but since I was looking to make things easy and more time efficient I used the strawberry jam.
You’ve probably noticed there are some cupcakes that don’t have liners on them. As the cupcakes cooled, the liners pulled away from the cake, so I just took them off completely. I think it had to do with the type of liners I used, but if anyone knows of another reason this could happen, I would love to hear it!

Megan, these cupcakes are so precious and perfect! I love the flavor almond extract gives cakes.. makes them so bright and flavorful! And the strawberry buttercream.. I kinda just want to bury my face in it.
